  • Juice of 1 lemon (about 23 tablespoons)

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Sauté the diced onion for 2-3 minutes until softened. Add minced garlic and cook for another 30 seconds.
  2. Stir in the rice to coat with oil and aromatics, toasting for about a minute.
  3. Add the chicken or vegetable broth, lemon juice, lemon zest, oregano, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat to low, cover tightly, and simmer for 18-20 minutes until liquid is absorbed.
  5. Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork before serving and garnish with parsley if desired.
