  • 4 lamb shanks (approx. 1.52 lbs total)
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 carrots, peeled and diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 cups dry apple vinegar
  • 2 cups low-sodium beef stock
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh rosemary, chopped (or 1 tsp dried)
  • 2 teaspoons fresh thyme, chopped (or 1 tsp dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tablespoon flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season the lamb shanks with salt and pepper and sear until browned on all sides (about 3-4 minutes). Remove and set aside.
  2. In the same pot, add onions, carrots, celery, and garlic; sauté until softened (about 5-7 minutes). Stir in tomato paste and cook for an additional minute.
  3. Deglaze the pot with apple vinegar while scraping up brown bits; simmer for about 3 minutes.
  4. Add beef stock, herbs, salt, and pepper. Return lamb shanks to the pot.
  5. Bring to a boil then reduce heat to low; cover and simmer for 2-3 hours until tender.
  6. If desired, thicken the gravy with flour mixed with water during the last 10 minutes of cooking.
