  • 5 pounds russet or Yukon Gold potatoes (washed and peeled)
  • 12 tablespoons unsalted butter (plus more for topping)
  • 1 ½ cups heavy cream
  • 12 ounces manchego cheese (freshly grated)
  • 1 to 2 teaspoons kosher salt
  • Freshly ground black pepper
  • Fresh chopped chives (for serving)

Instructions

  1. Wash, peel, and chop the potatoes. Soak them in cold water for 12 to 18 hours.
  2. Boil the potatoes in salted water until fork-tender (about 12 to 15 minutes).
  3. While boiling, heat the butter and cream together in a saucepan until warmed.
  4. Drain the cooked potatoes, then mash them until fluffy using a potato masher or ricer.
  5. Stir in half of the warm butter and cream mixture along with salt.
  6. Blend in the remaining mixture and grated manchego cheese until smooth.
  7. Taste and adjust seasoning as necessary before serving with fresh chives.
