  • 11/4 lbs boneless, skinless chicken thighs
  • 1/2 cup gluten-free flour
  • 2 Tablespoons extra virgin olive oil
  • 1 cup chicken broth
  • 1/4 cup chopped pecans
  • 3 Tablespoons pure maple syrup
  • 1 Tablespoon dijon mustard
  • 1 Tablespoon apple cider vinegar
  • 2 teaspoons gluten-free reduced-sodium Tamari
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by seasoning the gluten-free flour with salt and pepper in a shallow dish. Dredge each chicken thigh in the seasoned flour.
  2. In a medium bowl, whisk together chicken broth, maple syrup, pecans, dijon mustard, apple cider vinegar, Tamari, and dried rosemary.
  3. Heat olive oil in a cast iron skillet over medium-high heat. Sear the chicken thighs until golden brown on both sides, then transfer them back to the plate.
  4. Remove the skillet from heat; add the broth mixture to deglaze the pan. Return to heat, bring to simmer, then nestle the chicken back into the sauce.
  5. Loosely cover with foil and simmer until fully cooked (about 10 minutes), flipping once or twice.
  6. Plate the chicken and pour sauce over before serving.
