  • 3 boneless skinless chicken thighs
  • 12 oz farfalle pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded parmesan
  • 1/4 cup diced sun-dried tomatoes
  • Fresh spinach
  • Chopped fresh basil
  • 3/4 tbsp smoked sweet paprika
  • 1 tbsp Italian seasoning
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp sun-dried tomato oil
  • 2 tbsp butter
  • 2 tbsp dried shallots
  • 2 tbsp minced garlic
  • 1 tbsp minced onion
  • 3 tbsp Bob's Red Mill 1:1 gluten-free flour
  • 2 tbsp tomato paste

Instructions

  1. Cook the farfalle pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. Season chicken thighs with smoked paprika, Italian seasoning, salt, and pepper.
  3. In a skillet, heat sun-dried tomato oil over medium heat and sauté the seasoned chicken until golden brown on both sides. Remove from skillet.
  4. In the same skillet, melt butter and add shallots, garlic, and onion. Sauté until fragrant; stir in gluten-free flour to create a roux.
  5. Gradually whisk in chicken broth followed by heavy cream; bring to a simmer before adding parmesan cheese, sun-dried tomatoes, spinach, tomato paste, additional seasoning, and salt.
  6. Return the chicken to the skillet with the sauce; let simmer for about 5 minutes.
  7. Toss in cooked pasta until well-coated with sauce; garnish with fresh basil before serving.
