  • 3/4 cup dried currants
  • 1 large egg
  • 1/3 cup + 1 tablespoon granulated sugar
  • 1/3 cup butter, softened
  • 1 cup – 1 tablespoon self-raising flour

Instructions

  1. Preheat your oven to 160°C (325°F) and line a muffin tin with cases.
  2. In a mixing bowl, combine prepared mincemeat, dried currants, egg, sugar, butter, and flour.
  3. Mix with a whisk or electric mixer until smooth (about 2 minutes).
  4. Spoon the mixture into muffin cases until three-quarters full.
  5. Bake for 25–30 minutes until golden brown and springy to the touch.
