  • 1 grilled chicken breast, sliced
  • 2 jammy eggs (boiled 7 minutes, peeled and halved)
  • Avocado, sliced
  • 1 cup cherry tomatoes, halved
  • Cucumber, chopped
  • 1 cup kalamata olives
  • 2 tbsp crumbled feta cheese
  • 1 cup mixed greens or romaine lettuce
  • Salt & cracked pepper to taste
  • 1 tbsp olive oil
  • 1 tsp lemon juice or apple cider vinegar
  • Pinch of oregano

Instructions

  1. Grill or pan-sear the chicken breast until fully cooked (about 4-5 minutes per side). Let it rest before slicing into bite-sized pieces.
  2. Bring a pot of water to a boil. Gently add the eggs and cook for precisely 7 minutes. Once done, transfer them to an ice bath. After cooling, peel and halve the eggs.
  3. In a large mixing bowl, layer your mixed greens as the base. Next, arrange slices of avocado, chopped cucumber, halved cherry tomatoes, kalamata olives, sliced chicken breast, and halved jammy eggs. Finish by sprinkling crumbled feta cheese on top along with salt and cracked pepper to taste.
  4. Drizzle olive oil and lemon juice (or your preferred dressing) over the assembled salad. Toss gently if desired and serve immediately for maximum freshness.
