  • 1 tablespoon chili powder
  • 1 tablespoon ancho chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon brown sugar
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional)
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste
  • 8 corn tortillas
  • Toppings: sour cream, cotija cheese, guacamole, salsa, pickled red onions, chopped cilantro

Instructions

  1. Pat the sirloin dry and chop it into bite-sized cubes.
  2. In a mixing bowl, combine chili powder, ancho chili powder, garlic powder, cumin, brown sugar, onion powder, oregano, coriander, smoked paprika, cayenne pepper (if using), salt, and pepper.
  3. Toss the steak cubes in a bowl with vegetable oil and coat them generously with the spice mixture.
  4. Let the marinated steak sit for about 5 to 10 minutes while you prepare your toppings.
  5. Heat a cast iron skillet over medium-high heat and add the remaining vegetable oil.
  6. Sear the steak for 1 to 2 minutes per side until browned but not overcooked (about 3 to 5 minutes total).
  7. Assemble tacos by piling cooked steak onto warmed tortillas and adding your desired toppings.
