  • 1 1/4 cups light brown sugar
  • 1 tablespoon pure vanilla extract
  • 2 eggs, at room temperature
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 12 ounces melted milk chocolate
  • 2 tablespoons salted butter for topping
  • 3 tablespoons cinnamon sugar for topping

Instructions

  1. In a mixing bowl, cream together the salted butter, light brown sugar, and vanilla until fluffy. Add eggs one at a time.
  2. Mix in flour, baking soda, cinnamon, ginger, nutmeg, and salt until combined.
  3. Roll out the dough to about 1/4 inch thick and cut out pumpkin shapes.
  4. Cut faces into half of the cookies and freeze for 15-20 minutes.
  5. Preheat oven to 350°F (175°C) and bake for 8-12 minutes until golden.
  6. Brush with melted butter and sprinkle with cinnamon sugar before assembling with chocolate filling.
