  • 1 lb flank steak (thinly sliced against the grain)
  • 1/4 cup corn starch
  • 1 carrot (peeled and julienned)
  • 1 red bell pepper (sliced into strips)
  • 1/3 cup green onions (thickly sliced from 4 stems)
  • 1 Tbsp unsalted butter
  • 2 Tbsp neutral oil
  • 1 tsp fresh ginger (peeled and grated)
  • 4 garlic cloves (peeled and grated)
  • 1/3 cup brown sugar
  • 1/3 cup water
  • 1/3 cup low-sodium soy sauce
  • 1 tsp Sriracha

Instructions

  1. In a bowl, coat beef slices with cornstarch until evenly coated.
  2. In another bowl, mix brown sugar, water, soy sauce, ginger, garlic, and Sriracha; set aside.
  3. Heat oil and butter in a skillet over medium-high heat. Stir-fry carrot and bell pepper for about 3-4 minutes until crisp-tender; remove from skillet.
  4. Increase heat to high, add beef in batches if necessary, searing for about 2 minutes per side until crispy.
  5. Return vegetables to skillet with green onions, pour sauce over everything, and simmer on medium-low until thickened (about 3 minutes).
