  • 2 Large eggs
  • 1 Egg yolk
  • 5 TBSP Unsalted butter
  • 1/3 cup Oil (canola or vegetable)
  • 1 tsp Pure vanilla extract
  • 1/2 cup All-purpose flour
  • 3/4 cup Unsweetened cocoa powder (dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips
  • 1/2 cup All-purpose flour
  • 1 tsp Cornstarch
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Unsalted butter (room temperature)
  • 1/3 cup Brown sugar (packed light or dark)
  • 1/8 cup White granulated sugar
  • 1/4 cup Peanut butter (creamy)
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1/2 cup Quick oats
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini M&M's

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together sugar, eggs, egg yolk, butter, oil, and vanilla until smooth. Sift in flour, cocoa powder, cornstarch, and salt; fold in the chocolate chips.
  3. Pour the brownie batter into the prepared pan and bake for 25 minutes.
  4. While it bakes, prepare the monster cookie layer by mixing flour, cornstarch, baking soda, and salt in one bowl; in another bowl, cream butter with sugars and peanut butter before combining with dry ingredients and adding oats and mix-ins.
  5. Once the brownie layer is baked and cooled slightly, spoon dollops of cookie dough on top and spread gently if desired. Bake again for 15–20 minutes until set.
  6. Let cool completely before slicing into bars.
