  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional, for heat)
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 large carrots, sliced
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • to taste salt and pepper
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef cubes for 5-7 minutes; remove and set aside.
  2. In the same pot, sauté chopped onion until softened (about 5 minutes). Add minced garlic and cook for another minute.
  3. Stir in spices (cumin, coriander, cinnamon, turmeric, paprika, and cayenne pepper) and toast for 1-2 minutes.
  4. Return beef to the pot; add diced tomatoes and beef broth. Bring to a boil then reduce heat and simmer for about 1 hour.
  5. Add chickpeas and chopped vegetables; stir well and adjust seasonings as needed. Simmer for an additional 30 minutes.
  6. Serve hot with garnishes like cilantro or parsley.
