  • 1 small onion (chopped)
  • 2 ribs celery (chopped)
  • 1 carrot (peeled and chopped)
  • 2 cloves garlic (minced)
  • 1 quart chicken broth
  • 14 ounces coconut milk
  • 1 sweet-tart apple (peeled)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 2 teaspoons garam masala
  • 1 pinch cayenne pepper
  • 1/2 teaspoon salt
  • 1 tablespoon flour
  • 3 tablespoons olive or coconut oil (divided usage)

Instructions

  1. Heat oil in a stock pot over medium heat. Add chicken seasoned with spices and brown on all sides. Remove and set aside.
  2. Sauté onion, celery, and carrot until soft; add garlic and cook until fragrant.
  3. Bloom spices in the pot before adding some broth to smooth out lumps.
  4. Add the rest of the broth and rice; bring to a gentle boil and simmer for 15 minutes.
  5. Stir in grated apple and chicken; cook for an additional 5 minutes.
  6. Mix in coconut milk and adjust seasoning before serving.
