Mutabal is a delectable Middle Eastern eggplant dip that captivates with its creamy texture and smoky flavor. This versatile dish combines roasted eggplant, tahini, yogurt, garlic, and fresh lemon juice to create a perfect appetizer for gatherings or a healthy snack for everyday enjoyment. Ingredients

  • 2 eggplants
  • ¼ cup tahini
  • ¼ cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic
  • ¾ teaspoons salt
  • 1 tablespoon flat-leaf parsley (chopped)
  • ½ teaspoon smoked paprika
  • 2 tablespoons pine nuts (lightly toasted on a pan, or pomegranate seeds)

Instructions

  1. Preheat your oven or air fryer to 400°F (200°C). Cut the eggplants in half lengthwise, score the flesh, drizzle with olive oil, and sprinkle with salt.
  2. Roast the eggplants on a baking sheet for about 30 minutes or in the air fryer for about 20 minutes until tender. Allow to cool slightly before scooping out the flesh.
  3. In a food processor, blend the roasted eggplant flesh, tahini, yogurt, lemon juice, olive oil, garlic, and salt until creamy. Adjust seasoning as needed.
  4. Transfer to a serving bowl and garnish with toasted pine nuts or pomegranate seeds, chopped parsley, and smoked paprika. Enjoy with your favorite dippers!
