  • 5 tablespoons unsalted butter (chilled)
  • 5 tablespoons lard
  • 1 pinch salt
  • 1 teaspoon distilled white vinegar
  • 46 tablespoons water
  • 2 tablespoons salted butter
  • 2 cups yellow onion (chopped)
  • 1½ cups carrot (diced)
  • 1 cup celery (diced)
  • 4 teaspoons garlic (minced)
  • 3 red potatoes (peeled and diced)
  • 2 cups beef stock
  • 1¼ teaspoon English mustard (such as Colman's)
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons fresh parsley (finely chopped)

Instructions

  1. Prepare the pastry by mixing flour, chilled butter, lard, salt, and vinegar in a bowl until crumbly. Gradually add cold water until dough forms. Wrap and refrigerate for 30 minutes.
  2. Cook chopped onions, diced carrots, and celery in melted butter over medium heat until softened. Stir in minced garlic and cook briefly.
  3. In a bowl, combine cooked vegetables with diced potatoes, crumbled corned beef, beef stock, mustard, and black pepper. Mix well.
  4. Preheat your oven to 375°F (190°C). Roll out half of the pastry for the base and place it in a pie dish. Fill with the corned beef mixture and cover with the remaining pastry.
  5. Seal edges and cut slits for steam to escape. Bake for about 75 minutes until golden brown.
