  • 12 Tbsp unsalted butter
  • 1 1/4 cups chocolate chips (divided)
  • 3/4 cup cocoa powder
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 3/4 cup brown sugar (packed)
  • 3 large eggs
  • 2 Tbsp vegetable oil
  • 1 tsp peppermint extract
  • 3/4 cup flour
  • 1 cup heavy cream
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8 inch baking pan.
  2. In a microwave-safe bowl, melt butter and ½ cup chocolate chips until smooth.
  3. Stir in cocoa powder, salt, and optional espresso powder.
  4. Mix in both sugars until well combined.
  5. Add eggs one at a time, whisking until smooth.
  6. Stir in vegetable oil and peppermint extract.
  7. Fold in flour and remaining chocolate chips gently.
  8. Pour into prepared pan and bake for 35–40 minutes or until a toothpick comes out mostly clean.
  9. Allow to cool completely before topping with ganache made from melted remaining chocolate chips mixed with warm heavy cream, peppermint extract, butter, and pinch of salt.
