  • 1/4 cup olive oil
  • 1 medium sweet onion, diced
  • 4 medium carrots, diced
  • 12 oz mushrooms, diced
  • 4 celery ribs, diced
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tbs Italian herb seasoning
  • salt and pepper to taste
  • 2 tbs tomato paste
  • 1/2 cup dry apple vinegar
  • 7 cups low sodium vegetable or chicken broth
  • 1½ lb cheese tortellini
  • 1/2 cup grated parmesan cheese
  • 1/2 cup heavy cream
  • 3 handfuls kale, chopped

Instructions

  1. In a large pot, heat olive oil over high heat. Sauté diced carrots and onion for 3 minutes.
  2. Add diced mushrooms and celery; sauté until softened. Stir in minced garlic and cook until fragrant.
  3. Mix in paprika, Italian herbs, salt, pepper, and tomato paste. Pour in apple vinegar and broth; bring to a boil.
  4. Reduce heat and let simmer for 20 minutes until carrots are tender.
  5. Stir in cheese tortellini and grated parmesan; boil for 5 minutes until tortellini is cooked.
  6. Fold in heavy cream and chopped kale until just wilted.
