  • 4 chicken breasts (about 600g)
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 200g mushrooms, sliced
  • 2 garlic cloves, minced
  • 250ml chicken stock
  • 800g potatoes, peeled and cubed
  • 50g butter
  • 100ml milk

Instructions

  1. Boil cubed potatoes in salted water for about 15-20 minutes until tender.
  2. Drain potatoes and mash them with butter and milk until smooth; season with salt and pepper.
  3. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken until golden brown (7-8 minutes per side). Remove from skillet.
  4. In the same skillet, sauté onions, peppers, and mushrooms for about 5-7 minutes until softened. Add minced garlic and cook briefly.
  5. Sprinkle flour over vegetables; stir well. Gradually add chicken stock while stirring continuously. Add dried thyme and simmer until thickened (about 5 minutes).
  6. Return chicken to the skillet; cook together for a few more minutes.
  7. Serve chicken topped with gravy alongside creamy mashed potatoes.
