  • 1 can (15 ounces) of diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 can (15 ounces) of cannellini beans, drained and rinsed
  • 1 cup small pasta (like ditalini or elbow)
  • Salt and pepper to taste
  • ¼ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; sauté until translucent.
  2. Stir in diced carrots and celery; cook for about 5 minutes until softened.
  3. Add dried oregano, thyme, and bay leaf; cook for an additional minute until fragrant.
  4. Pour in the diced tomatoes with their juices; stir well.
  5. Add broth and bring to a boil.
  6. Reduce heat to simmer; cook for 15 minutes to meld flavors.
  7. Mix in rinsed cannellini beans and small pasta; cook until pasta is al dente (about 8–10 minutes).
  8. Season with salt and pepper to taste. Remove bay leaf before serving.
  9. Serve hot, garnished with freshly grated Parmesan cheese and chopped parsley.
