  • 1 medium cucumber, chopped
  • 1 pint grape tomatoes, halved
  • 1 small bell pepper, chopped
  • ¼ cup finely diced red onion
  • 1 cup Italian dressing
  • â…” cup crumbled feta cheese
  • ¼ cup sliced black olives
  • 3 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Cook the rotini according to package directions in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. Meanwhile, chop the cucumber, halve the grape tomatoes, chop the bell pepper, and finely dice the red onion.
  3. In a mixing bowl, combine cooled pasta with vegetables, Italian dressing, feta cheese, olives, and parsley. Season with salt and black pepper.
