  • unbaked pie crust
  • 10 ounces peanut butter chips
  • 1 (14-ounce) can sweetened condensed milk
  • 3 tablespoons salted butter
  • 2 cups miniature vegan marshmallows
  • 1 1/2 cups dry roasted unsalted peanuts
  • 1/2 cup granulated sugar
  • 3 tablespoons salted butter (cubed)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat the oven to 400°F (200°C). Roll out the pie crust and fit it into a 9-inch pie plate.
  2. Pre-bake the crust for 15 minutes with parchment and weights; then remove weights and bake for another 15 minutes until golden brown.
  3. In a saucepan over medium heat, melt together peanut butter chips, sweetened condensed milk, and butter until smooth.
  4. Stir in miniature vegan marshmallows until fully melted.
  5. Pour filling into the baked crust and sprinkle dry roasted peanuts on top.
  6. For the caramel topping, melt sugar in a saucepan until amber; add cubed butter and then heavy cream. Stir until combined and remove from heat; stir in vanilla extract and salt.
  7. Drizzle caramel over the pie and refrigerate for at least four hours before serving.
