  • 4 to 4 1/2 lbs ripe peaches (about 1418 medium)
  • ½ cup water
  • 4 cups granulated sugar

Instructions

  1. Rinse peaches under cool water and blanch in boiling water for 30-60 seconds. Transfer to cold water to cool.
  2. Peel peaches by cutting them in half and removing the pit; use your hands or a knife to peel the skin off.
  3. Cut peeled peaches into quarters and place them in a large saucepan with ½ cup of water. Simmer over medium heat until soft.
  4. Puree cooked peaches using a food processor or immersion blender until smooth.
  5. Return peach puree to the saucepan and stir in 4 cups of sugar until dissolved.
  6. Bring mixture to a soft boil, then reduce heat to maintain a low boil while stirring often until thickened (about 40 minutes).
  7. Pour hot peach butter into sterilized jars, leaving about ¼” headspace if canning. Process in a water bath canner for 10 minutes if preserving.
