  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • Red gel food coloring
  • 1/4 cup coarse sugar or crushed peppermint candies for coating

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  2. In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, vanilla extract, and peppermint extract.
  3. Gradually add dry ingredients to the wet mixture until just combined into a soft dough.
  4. Divide dough in half; color one half with red gel food coloring.
  5. Chill both dough halves wrapped in plastic wrap for at least 30 minutes.
  6. Roll out each dough half into rectangles (10×12 inches). Layer the colored dough on top of the plain dough and roll tightly into a log.
  7. Chill the log again for at least 2 hours before slicing into rounds.
  8. Preheat oven to 375°F (190°C). Coat the log with coarse sugar or crushed peppermint candies if desired.
  9. Bake cookies for about 8 to 10 minutes until edges are lightly golden.
