  • 3 red bell peppers
  • 1 jalapeño pepper
  • 3 garlic cloves
  • 1 red onion
  • 4 tablespoons olive oil
  • 4 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 3 tablespoons smoked paprika
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • Salt and black pepper (to taste)
  • 2 tablespoons honey (or brown sugar, optional)
  • ½ cup chicken stock (or water)
  • A generous handful of fresh parsley (roughly chopped)
  • 2 teaspoons red pepper flakes (adjust to taste)

Instructions

  1. In a mixing bowl, combine sliced red bell peppers, jalapeño, garlic cloves, red onion, olive oil, salt, black pepper, lemon juice, lemon zest, smoked paprika, oregano, and thyme. Mix well.
  2. Marinate the chicken thighs in half of the marinade for at least 30 minutes or overnight in the refrigerator.
  3. Preheat your grill or oven to medium-high heat (400°F for baking). Cook the chicken thighs skin-side down on the grill for about 10 minutes per side until they reach an internal temperature of 165°F. If baking, place in a dish with reserved marinade and cook for 25-30 minutes.
  4. Let the chicken rest before serving and garnish with fresh parsley.
