  • 2 medium-sized potatoes, diced
  • 7 large tomatoes, crushed
  • ½ teaspoon turmeric
  • ½ teaspoon cayenne pepper
  • 1 teaspoon salt
  • Freshly ground black pepper to taste
  • â…“ cup coarsely chopped cilantro (or dill/mint)
  • 3 garlic cloves, thinly sliced
  • 2 tablespoons unsalted butter, cut into pieces

Instructions

  1. Heat vegetable oil in a pot over medium heat until shimmering.
  2. Sauté the chopped onion until golden.
  3. Add turmeric and stir to combine.
  4. Introduce diced potatoes and cook for about 5 minutes.
  5. Pour in crushed tomatoes and mix well.
  6. Season with salt and cayenne pepper; stir to combine.
  7. Add washed basmati rice and 2 cups of water; bring to a gentle boil.
  8. Reduce heat to low and simmer until liquid is mostly absorbed.
  9. If rice is firm, add an additional ½ cup of water and continue simmering.
  10. Cover the pot with a lid wrapped in a towel; let steam for about 10 minutes.
  11. Fluff the rice gently with a fork; add sliced garlic and butter pieces on top.
  12. Garnish generously with chopped herbs before serving.
