  • 23 cloves garlic, minced
  • 2 tablespoons lime juice or white vinegar
  • 3 tablespoons oil of choice
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup fresh cilantro leaves
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 whole jalapeño chiles, roughly chopped
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon or lime juice
  • 1 cup jasmine rice
  • 1 tablespoon butter/oil
  • 1/4 cup onion, diced
  • 23 garlic cloves, minced
  • 1 teaspoon turmeric
  • 1/4 teaspoon EACH cumin, onion powder, salt, pepper
  • 2 cups chicken stock
  • 1 cup frozen peas

Instructions

  1. Marinate the chicken by mixing garlic, lime juice, olive oil, cumin, salt, and pepper in a bowl. Coat the chicken and refrigerate for at least 1 hour.
  2. Preheat grill to medium-high or oven to 450°F.
  3. Grill chicken for 5-7 minutes per side or bake for 30 minutes until internal temperature reaches 165°F.
  4. For the yellow rice, sauté onion and garlic in oil, add drained jasmine rice and turmeric, then pour in chicken stock and cook covered for 15 minutes, stirring in frozen peas before resting the rice.
  5. Blend cilantro, mayonnaise, sour cream, jalapeños, garlic, olive oil, and lime juice for the green sauce until smooth.
  6. Serve grilled chicken over yellow rice and drizzle with green sauce.
