  • 1 cup pineapple, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a skillet over medium heat. Add cubed chicken and cook until golden brown and fully cooked; set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened.
  3. Add cubed pineapple and cook for about 2 minutes until caramelized.
  4. Stir in jasmine rice along with chicken broth, soy sauce, grated ginger, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
  6. Return the chicken to the skillet; mix well and heat through.
  7. Garnish with green onions and sesame seeds before serving.
