  • 1 can (4 oz) diced green chilies
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp ground cumin (optional)
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • Chopped cilantro, for garnish
  • Lime wedges, for garnish

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add the diced onion and cook until softened, about 3–4 minutes.
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper to season the mixture.
  4. Add in the pinto beans, diced tomatoes with green chilies, diced green chilies, and beef broth; stir well.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for about 30 minutes.
  6. Taste and adjust seasoning as needed; mash a few beans if you prefer a thicker consistency.
  7. Serve warm with optional garnishes like chopped cilantro or lime wedges.
