  • 1 large egg
  • 1 and 1/2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2 tablespoons warm milk
  • 1 teaspoon espresso powder

Instructions

  1. Prepare your baking sheets by lining them with parchment paper or silicone mats.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and vanilla, mixing until well combined.
  3. Gradually incorporate the flour, cocoa powder, and salt into the mixture.
  4. Warm the milk in the microwave and dissolve the espresso powder in it before adding it to the dough.
  5. Mix until creamy and pipeable; adjust with more milk if necessary.
  6. Transfer the dough to a piping bag fitted with a large tip, pipe desired shapes onto prepared baking sheets.
  7. Chill piped cookies for at least 20–30 minutes before baking in a preheated oven at 350°F (177°C) for 12–15 minutes.
  8. Allow cookies to cool before dipping in melted chocolate if desired.
