  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup ground pistachios
  • 1 tbsp granulated sugar
  • 90 g butter (melted)
  • 480 g cream cheese (full fat, room temp)
  • 100 g sour cream
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1/2 tsp kosher salt
  • 3/4 cup granulated sugar
  • 2 eggs
  • 50 g pistachio paste
  • 2 tbsp cornstarch
  • 200 g white chocolate
  • 1/3 cup heavy cream
  • 1/4 cup chopped pistachios
  • 40 g pistachio paste

Instructions

  1. Preheat oven to 180°C (350°F). In a mixing bowl, combine graham cracker crumbs, ground pistachios, and sugar. Add melted butter and mix well. Press into a greased 9-inch cake pan and bake for 5-8 minutes. Cool.
  2. Reduce oven temperature to 140°C (280°F). In another bowl, mix room-temperature cream cheese, sour cream, heavy cream, sugar, vanilla extract, and salt until smooth. Gradually add pistachio paste and cornstarch; mix until no lumps remain.
  3. Whisk eggs separately before incorporating them into the batter until smooth.
  4. Pour the filling over the cooled crust. Tap the pan to release air bubbles and bake for about an hour until set but slightly jiggly in the center.
  5. Allow cheesecake to cool in the oven with the door ajar for 1-2 hours before refrigerating for at least 5 hours before serving.
