  • 1 firm pear
  • 200 ml apple vinegar
  • 2 tbsp brown sugar
  • Zest of 1 orange
  • 1 wheel brie (200250 g)
  • 1 sheet puff pastry
  • 1 egg (for egg wash)
  • Optional: Flaky salt or chopped rosemary

Instructions

  1. In a small pot, combine apple vinegar, brown sugar, orange zest, cinnamon stick, cloves, and optional balsamic vinegar.
  2. Add the pear and simmer for 20-25 minutes until tender. Let cool in the liquid.
  3. Cut the brie in half horizontally and place the poached pear upright on the bottom half. Cover with the top half of brie.
  4. Roll out puff pastry to encase the brie and pear completely; seal edges well.
  5. Place seam-side down on a baking sheet lined with parchment paper. Brush with beaten egg wash and sprinkle with optional salt or rosemary.
  6. Bake at 200°C (392°F) for 20-25 minutes until golden brown. Rest for 5 minutes before serving.
