  • 2 cups granulated sugar
  • 3/4 cups water
  • 1/2 cup liquid glucose/light corn syrup
  • Few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare your baking sheet by greasing a piece of baking paper and placing it on a tray.
  2. Insert bamboo skewers into each apple and set aside.
  3. In a saucepan over medium heat, mix sugar, water, corn syrup, and black food coloring until dissolved.
  4. Stop stirring once dissolved; wash down the sides of the pot to prevent crystallization.
  5. Cook until reaching hard crack stage (150ºC/310ºF). Test by dropping some into cold water – it should form hard threads.
  6. Dip each apple into the caramel mixture, swirling for an even coat.
  7. Place dipped apples on the prepared baking sheet and allow to cool and harden.
