  • 1 1/2 lbs. potatoes
  • 1 lb. green beans
  • 1 1/2 tbsp. olive oil
  • 4 garlic cloves, minced
  • 1/2 tbsp. taco seasoning
  • 1/2 tbsp. oregano
  • 1/2 tsp. salt
  • 1/3 tsp. pepper
  • 1/4 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the potatoes, then toss them in a mixing bowl with olive oil, taco seasoning, oregano, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes on a baking sheet and bake for 15 minutes.
  4. While they bake, combine green beans with olive oil, minced garlic, and salt in the same bowl.
  5. After 15 minutes, add the green beans to the baking sheet with the potatoes and mix gently.
  6. Return to the oven for an additional 20-30 minutes until vegetables are tender.
