  • 240g cream cheese or mascarpone
  • 225g butter
  • 1 egg yolk
  • 260g flour
  • 70g powdered sugar
  • 40g cocoa powder
  • 1L milk
  • 3 eggs
  • 100g cornstarch
  • 150g brown sugar
  • 200g pralinĂ© paste
  • 200g roasted hazelnuts

Instructions

  1. Prepare the crust by mixing flour, cocoa powder, salt, powdered sugar, cold butter, and cold cream cheese until smooth. Chill for 30 minutes.
  2. Preheat the oven to 180°C (350°F) and bake the crust for about 35 minutes.
  3. Whisk together eggs, brown sugar, cornstarch; gradually add warmed milk while whisking. Heat until thickened.
  4. Incorporate butter, cream cheese, and praliné into the mixture until smooth.
  5. Pour filling over the baked crust and bake for another 45 minutes.
  6. Cool and top with caramelized hazelnuts before serving.
