  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • ½ cup pumpkin purée
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts (optional)
  • ½ cup all-purpose flour for crumble topping
  • ¼ cup granulated sugar for crumble topping
  • 2 tablespoons brown sugar for crumble topping
  • 4 tablespoons unsalted butter, melted for crumble topping
  • 1 teaspoon ground cinnamon for crumble topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt until well combined. Set aside for later use.
  3. In a large bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the pumpkin purée until fully integrated. Add in the egg and vanilla extract, mixing until smooth.
  4. Gradually mix in the dry ingredients from Step 2 until just combined. If desired, fold in chopped walnuts gently to avoid over-mixing.
  5. Drop portions of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart for even baking.
  6. In a small bowl, combine all crumble topping ingredients using a fork until crumbly but still textured.
  7. Sprinkle the crumble mixture evenly over each cookie dollop on the baking sheet.
  8. Place the baking sheet in your preheated oven for about 12–14 minutes or until cookies are golden brown. Allow to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
