  • 4 mini pumpkins (or ramekins)
  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. For mini pumpkins, cut off tops and scoop out seeds.
  3. In a mixing bowl, whisk together heavy cream, granulated sugar, egg yolks, vanilla extract, pumpkin puree, ground cinnamon, ground ginger, and salt until smooth.
  4. Pour the custard mixture into prepared mini pumpkins or ramekins, leaving space at the top.
  5. Place into a baking dish and fill with hot water halfway up the sides. Bake for about 30 minutes until set but slightly jiggly in the center.
  6. Allow cooling at room temperature before transferring to the refrigerator for at least 2 hours.
  7. Just before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
