  • 1 large egg
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 cup canned pumpkin
  • 1¼ cups powdered sugar for glaze
  • 3 tablespoons pure maple syrup for glaze
  • 1 tablespoon dark corn syrup for glaze
  • ½ tablespoon water for glaze
  • ¼ teaspoon ground cinnamon for glaze

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini donut pan.
  2. In a bowl, mix dry ingredients: all-purpose flour, oat flour, pumpkin pie spice, ground cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, whisk together wet ingredients: egg, light brown sugar, oil, vanilla extract, and canned pumpkin until well combined.
  4. Combine wet and dry mixtures to form a thick batter.
  5. Fill each cavity of the donut pan halfway with batter using a piping bag.
  6. Bake for about 6-7 minutes or until donuts spring back when lightly touched.
  7. Cool on wire rack before glazing.
  8. Whisk glaze ingredients until smooth and dip the tops of cooled donuts into the glaze.
