  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk
  • 1/4 cup unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  2. In a mixing bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, kosher salt, granulated sugar, and spices.
  3. In a separate bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until combined.
  4. Gradually add the wet mixture to the dry ingredients; stir until just combined.
  5. Transfer the batter to the greased dish and prepare the topping by mixing granulated sugar, brown sugar, cinnamon, and chopped pecans.
  6. Sprinkle the topping over the batter and pour hot water over it without stirring.
  7. Bake for about 40 minutes or until set in the center.
