  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined to create the crumble mixture.
  3. Press two-thirds of the mixture into the bottom of the prepared baking dish.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crust and spread evenly.
  6. Sprinkle remaining crumble on top and add chopped walnuts if desired.
  7. Bake for 30–35 minutes until golden brown and set. Allow cooling before slicing.
