  • 4 sweet onions
  • ½ cup apple cider
  • 1½ cups ricotta cheese
  • 1â…“ cups pumpkin purée
  • 2 cups mozzarella cheese
  • Fresh sage leaves
  • 2 sheets puff pastry

Instructions

  1. Cook chopped turkey bacon in a large skillet until crispy; set aside.
  2. In the same skillet, caramelize sliced onions with salt and pepper over medium-low heat for about 25–30 minutes. Add apple cider and cook for another 5 minutes.
  3. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface, place on parchment-lined baking sheets, score edges, and prick the center with a fork.
  4. In a bowl, mix ricotta cheese with pumpkin purée; season to taste. Spread mixture on the pastry, then top with caramelized onions, mozzarella cheese, and turkey bacon.
  5. Scatter fresh sage leaves on top, brush pastry edges with egg wash, and bake for 25–30 minutes until golden brown.
