  • 1 cup pumpkin puree
  • 2 cups sliced cremini mushrooms
  • 2 tablespoons chopped fresh sage
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup vegetable broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out puff pastry on a floured surface to about 1/8 inch thick; transfer to a parchment-lined baking sheet and trim edges.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook for another minute.
  4. Stir in mushrooms; cook until tender (around 7 minutes). Add pumpkin puree, sage, vegetable broth, salt, and pepper; mix well and heat through.
  5. Spoon filling onto puff pastry center, leaving a one-inch border. Fold edges over filling gently.
  6. Bake for 25-30 minutes until golden brown.
