  • ¼ cup packed light brown sugar
  • 1½ tsp pumpkin pie spice (or 2 cinnamon sticks)
  • ½ cup warm water
  • 1 tsp vanilla extract
  • 2 double shots of blonde espresso
  • 12 cups ice cubes
  • Cold oat milk, to taste

Instructions

  1. In a small saucepan, whisk together brown sugar, pumpkin puree, spices, and warm water. Simmer on low heat for 2-3 minutes until thickened.
  2. Remove from heat and stir in vanilla extract. Strain if desired.
  3. Store syrup in an airtight container in the fridge for up to one week.
  4. In a sealable jar, combine one double shot of freshly brewed espresso with 1-2 tablespoons of syrup and ice cubes. Shake vigorously for 20-30 seconds.
  5. Pour into a glass filled with fresh ice and top with cold oat milk as desired.
