  • 18 ounces sweetened red bean paste
  • 3 cups bread flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 tablespoon milk powder (optional)
  • 1 cup warm whole milk
  • 1/3 cup warm heavy cream
  • 1 egg
  • 1 egg yolk
  • 1 tablespoon whole milk (for egg wash)
  • 1 tablespoon sesame seeds (for topping)

Instructions

  1. In a stand mixer, combine bread flour, sugar, salt, instant yeast, and milk powder if using.
  2. Add warm whole milk, warm heavy cream, and the egg. Knead on low speed for about 10 minutes until tacky but not sticky.
  3. Cover the bowl and let it rest for about 2 hours until doubled in size.
  4. Divide the dough into 9 equal pieces and roll into balls.
  5. Flatten each ball into a circle, fill with red bean paste, seal tightly, and place seam side down on a parchment-lined baking sheet.
  6. Allow buns to rest for about 30 minutes to an hour while preheating your oven to 350°F.
  7. Brush with an egg wash made from egg yolk mixed with milk and sprinkle sesame seeds before baking for approximately 20 minutes until golden brown.
