  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • ½ cup roasted red peppers, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • 2 tablespoons balsamic vinegar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine mozzarella cheese, roasted red peppers, and fresh basil. Set aside.
  3. Slice pockets into each chicken breast and season inside and out with salt, black pepper, garlic powder, onion powder, and Italian seasoning.
  4. Stuff each pocket with the cheese mixture and secure with toothpicks.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken until golden brown on both sides (about 2–3 minutes each side).
  6. Add minced garlic to the skillet and cook until fragrant. Pour in chicken broth and balsamic vinegar; deglaze the pan.
  7. Transfer the skillet to the oven and bake for 18–22 minutes or until the internal temperature reaches 165°F (75°C).
  8. Let rest for five minutes before slicing and serving.
