1 pound strawberries
2 tablespoons honey
Juice of 1/2 lemon
4 sprigs fresh thyme
2 slices rustic bread
1 tablespoon olive oil
3/4 cup whole milk ricotta cheese
Pinch of sea salt
Instructions
Preheat the oven to 400°F (200°C). Place strawberries in a baking dish, drizzle with honey and lemon juice, and sprinkle with thyme. Roast for 20 minutes, stirring halfway through.
Drizzle olive oil on both sides of the rustic bread and toast in the oven for about 1 minute until golden.
In a food processor, whip ricotta cheese until light and fluffy.
Spread whipped ricotta on toasted bread, top with roasted strawberries and their juices. Garnish with additional thyme leaves and a pinch of sea salt.
