  • 1 pound cherry tomatoes
  • 1 head of garlic
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pound spaghetti or preferred pasta
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese (or plant-based alternative)
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse cherry tomatoes and dry them; place them in a bowl. Slice off the top of the garlic head.
  3. Season tomatoes with 2 tablespoons olive oil, salt, pepper, and red pepper flakes. Toss to coat.
  4. Line a baking sheet with parchment paper. Spread tomatoes on one side and place garlic cut side up on the other. Drizzle garlic with olive oil and sprinkle with salt.
  5. Roast for 25-30 minutes until tomatoes are blistered and garlic is soft.
  6. Meanwhile, boil salted water in a large pot; cook pasta according to package instructions until al dente.
  7. Reserve about 1 cup of pasta water before draining; do not rinse.
  8. Squeeze roasted garlic into a bowl and add roasted tomatoes along with their juices.
  9. Mash together with a fork or potato masher; mix in remaining olive oil, balsamic vinegar (if using), salt, and pepper.
  10. Combine cooked pasta with sauce; use reserved pasta water for desired consistency.
  11. Serve topped with chopped basil, grated cheese, and a drizzle of olive oil.
