  • 22 1/2 pounds beef flank steak (or skirt/roast)
  • ¼ cup vegetable oil
  • Salt, pepper, cumin, and Sazon (to adjust to taste)
  • 1 large bay leaf
  • 1 large onion (sliced)
  • 45 cloves garlic (minced)
  • 2 bell peppers (sliced)
  • 2 tomatoes (sliced)
  • 1 can (8 ounces) tomato sauce
  • 1 sprig thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 12 cups beef broth
  • 23 tablespoons parsley/cilantro

Instructions

  1. Trim excess fat from the beef and season generously with salt, pepper, cumin, and Sazon.
  2. In a skillet, heat oil over medium heat. Sear the beef until browned on both sides (3-4 minutes per side). Add bay leaf after browning one side.
  3. In the same skillet, sauté onions, garlic, bell peppers, tomatoes, tomato sauce, thyme, smoked paprika, cumin, and Sazon for about 3-5 minutes. Add beef broth and transfer three-quarters of this mixture to the slow cooker.
  4. Add seared beef to the slow cooker and cook on high for 3½ – 4 hours or low for 7 – 8 hours until tender.
  5. Shred the beef and combine it back into the sauce mixture in the skillet before serving.
