  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 Red Onion, sliced
  • 12 Honeycrisp Apples, sliced
  • 3/4 cup Apple Cider
  • 1/2 cup Chicken Broth or White Apple Vinegar
  • 2 tbsp Dijon Mustard
  • Olive oil, Salt, Pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season chicken thighs with onion powder, garlic powder, smoked paprika, salt, pepper, thyme, and rosemary.
  3. Heat olive oil in a cast iron skillet over medium-high heat and sear the chicken thighs skin-side down until golden brown (about 5-7 minutes per side).
  4. Add sliced red onions and honeycrisp apples around the chicken in the skillet.
  5. Transfer the skillet to the oven and bake for 20-25 minutes until chicken is cooked through (165°F internal temperature).
  6. For the sauce, remove chicken and veggies; whisk together butter, apple cider, broth (or vinegar), Dijon mustard, and minced garlic in the skillet over medium heat until thickened.
