  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • 2 tbsp all-purpose flour (optional, for thickening)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear beef cubes until browned on all sides; remove from pot.
  2. In the same pot, sauté onions, garlic, carrots, and celery until softened (5-7 minutes).
  3. Return beef to pot; stir in tomato paste and pour in beef broth with thyme, rosemary, bay leaves, salt, and pepper. Bring to a boil.
  4. Reduce heat to low; cover and simmer for at least 1.5 hours until beef is tender.
  5. For thicker stew, mix flour with water and add during the last 10 minutes of cooking.
  6. Prepare crusty bread bowls by hollowing them out gently.
  7. Serve hot stew in bread bowls.
