  • 150g salmon fillet
  • 1 cup uncooked brown rice
  • 2 eggs
  • Diced avocado
  • Salt and pepper
  • Optional: 1 tsp balsamic glaze

Instructions

  1. Rinse the brown rice under cold water. In a pot, combine with 1 cup of water and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer for 25-30 minutes until tender.
  2. Preheat your oven to 180°C (350°F). Season the salmon with salt and pepper, place it on a baking tray, and bake for 12-15 minutes until cooked through.
  3. For the soft-boiled eggs, bring water to a boil in a pot. Gently add the eggs and cook for 6-7 minutes. Transfer them to an ice bath immediately to stop cooking, then peel and cut in half.
  4. Assemble your bowl by layering cooked brown rice, baked salmon, diced avocado, and soft-boiled eggs. Drizzle with balsamic glaze if desired and season with salt and pepper before serving.
